The most informative, student-friendly FIU apartments are back with another blog post for our residents! That’s right, 4th Street Commons is once again dishing out the details on living well in Miami. This week, we’re highlighting some of our favorite dishes of the summer.


Nothing says summer like a fresh, light summer salad. They’re perfect for lunch when you know you’ll be hitting the pool later in the day. Plus, you can add tons of ingredients to a light summer salad that you wouldn’t normally think of adding to a basic garden salad. These salads are super easy to make, so don’t be intimidated by a long list of ingredients. Most of the work involves throwing a bunch of things in a bowl, and we have total confidence in your ability to do that.


Instead of going to some high-end health foods store and paying $14 for a salad, just whip up one of the dishes below. You’ll save money, you’ll feel great about yourself, and you’ll sharpen your chef skills.

Cilantro Chicken Salad with Mango-Avocado Salsa


For some salads, the name alone is enough to convince you to give it a shot. That’s certainly true with this salad, as the name mentions two of the best fruits in the world. Mango Salsa is a thing of beauty, and avocados are ridiculously popular right now. This salad is also more filling than most other salads thanks to the addition of chicken. You won’t be starving afterwards, and you won’t feel so full you can’t move. It’s a win-win!


Here’s what you’ll need for the dressing:

  • Lime Juice
  • Chopped Cilantro
  • Crushed Garlic Cloves
  • Honey
  • Brown Sugar
  • Cumin
  • Salt


...and for the salad:

  • Chicken Thighs
  • Romaine Lettuce
  • A Red Pepper


...and finally, for the salsa:

  • Mango
  • Avocado
  • Green Onion
  • Red Chili Flakes


Watermelon & More Fruit Salad


Here, we have a salad that has no lettuce, no tomatoes, and no carrots. If you’re super anti-vegetable, you’ll probably be a big fan of this salad. At this point, it seems like summer is just an excuse to call random dishes “salads.” We can’t deny that this salad is delicious, but we can question its status as a salad.


Here’s what you’ll need:


  • Cubed Watermelon
  • Quartered Strawberries
  • Blueberries
  • Raspberries
  • Halved Cherries
  • Blackberries
  • Lime Juice


Tex-Mex Style Potato Salad


It’s everyone’s favorite dish to bring to a BBQ, and this recipe puts a nice little twist on the classic creamy-style potato salad. By adding corn and roasting the potatoes, you’ll be able to bring out additional flavors without adding so much food that your salad turns into the main course. Whip this up at your next get-together and watch your friends’ jaws drop when they realize that you’re a secret master chef.

  • Baby Red Potatoes
  • Corn on the Cob
  • Red Bell Pepper
  • Orange Bell Pepper
  • Green Bell Pepper
  • Cumin
